Amatiteña is a single estate tequila crafted using artisanal methods at Cava de Oro Distillery (NOM 1477) in Amatitán, Jalisco. Produced by Alberto Partida, a fifth-generation Maestro Tequilero, it utilizes Blue Weber Agave from the distillery's El Novillero field. The agave is cooked in a stone oven heated by mesquite wood and then milled with a mechanical tahona. Fermentation occurs in wooden tanks with fibers, using spring water and ambient yeast, followed by distillation in original 19th-century copper pot stills. The Extra Añejo is a blend of tequilas aged three years in former red wine casks and four years in former bourbon barrels, incorporating both American and French oak. This additive-free spirit is bottled at 84 proof.
