On the nose its a honey and vanilla bomb with some traces of the rye grain. Upon mouthing and swishing, the nose picks upon black pepper, and more rye grain mixed with heavy honey and a green apple. In the throat, the rye and black pepper notes are more prevalent with a mint or sage note also evident. The honey and vanilla are faint. Nasally, the notes are fleeting but linger in the throat and fill the tongue with the oak and pepper. Nose 2/5 as the notes are simple and mild, Taste 3/5 as more complex layers of tastes show up and have a lasting finish. A very pleasant whisky that is easily crushable and would likely go extremely well as a rye and ginger. Overall 3/5 Repurchase: Yes Type: Daily Drinker/Mixer

Blair's notes are pretty accurate but I'm not as impressed. I get the bright mineral component, the grasses and burlap, even maybe the hint of peach/apple sweetness but it's really just young raw rye grain and a hint of oak. It's like a slightly aged High West Silver, with an appropriate ABV (vs High West's 67%). I really wanted to like it because it's local but unfortunately, like Dillon's Dry Gin, their rye comes off as the product of a young an inexperienced distillery. One that's working hard but not quite hitting the mark. $40 in Ontario.

This is a young dram which puts the alcohol and water up front. When I spend a little more time, I get and I teresting chocolate in the nose. Otherwise, it is light caramel on the nose, cerel sweet with a herbal note and mild spice in the palate, wax, and some light oak on the finish. Sadly it moved to bitterness fairly quickly too. The nose has promise. Maybe with more time.

Not a bad whisky by any means but definitely not a stellar opener either. On it's own it was a fairly mediocre Rye whisky, though it did mix well into a classic manhattan. Not overly impressed by this first attempt, but it is great to see a small batch distillery releasing whisky, I'll be looking forward to what Dillon's come's out with in the future.

Light, bright, smooth, slightly creamy finish, easy sipper - so soft I’d never mix or chill it except maybe with a tiny splash of soda. I like this one as an easy drink, but there’s not that much to drill down into in terms of complex tastes. Good if you want to drink a lot while not realizing what’s happening to you.

More flavor than thr cooor would suggest. I titislly very sweet and ceareal-y but it goves way to a light spice and smoke quickly. Its unique and I keep going back for more.
