There's apple and vanilla that's easily on the nose. Almost dessert like. Nice burnt oak in there as well. Spice is present. The palate opens with spice and cinnamon. That apple and vanilla then come through as dark caramel and oak continue throughout to the finish. It's dark caramel heavy. The oak is present but well balanced throughout. Manages to have some decedent quality to it while the heat and oak are present. To be a bit critical, it tastes as if it's more proofy than it is. (I was a bit surprised by the proof on my single barrel bottle.) With that, it's still very easy to drink and very flavorful. I wouldn't sleep on this. Cheers everybody.

Nose: Summer fruit like peach or apricots. Cinnamon and fenel punctuate the expression with bits of toffee and oak filling the cracks. Taste: Cinnamon spice and learher greet the front of the palate with oak and green pepper in the rear. Mouthfeel: Warming with medium viscosity. Finish: Oak and spices linger and feed through the entire sinus. This was a small batch, store pick.
So my bottle in this review is from Batch 24A23 @ 119.8 proof or 59.9 ALC/VOL. Some would say it is spicy/hot but for basically 120 proof I find it rather nice. Sure, there’s a little heat on the front end but that gives way to a wonder aray of flavors while that little touch of heat just lingers and tickles your tongue. Then it just mellows nicely.
Wood polish, hay, honey, caramel, apple fritter, powdered sugar, vanilla nose. Palate follows through with more apple, cinnamon, clove, nutmeg. Spicier than expected and no complaints. Long spicy apple finish. This would be worth stacking up against other apple pie bourbons like Elijah C barrel proof and Old Ezra 7yr.
Absolutely fantastic. This was a barrel pick from Seven Grand Whiskey Bar in DTLA. Warm sweet caramel coats your palate. It was very rich and complex. The finish was spicy and smooth, with an alcohol burn. One of the best whiskies I’ve had.
Honestly after midwinter nights dram, this is the best bottle at high west. For the price, its a great bourbon. Ive had prisoners share and nobles share and the cask strength is far better to me.
