Sweet up front moving to woody mid palate and finish. Somewhere in the middle to the finish I get a lingering of sweet tobacco and cedar. It’s as if you took the great smell inside a walk in humidor and made it a flavor.

Hillrock Estate Double Cask Rye is produced using organic rye grown right at the Hudson Valley estate. The whiskey is given two maturations: first in new charred American oak, then white oak that was seasoned for 2 years before the barrels were assembled and filled. Master Distiller Dave Pickerell chose air seasoning as a way of removing what can become bitter tannins that develop in kiln-dried wood.

Dark nutty brown with some hints of amber. Smells like cinnamon with a hint of vanilla and a trace of stone fruit. Cinnamon hits the tongue strong then quickly gives way to butterscotch and ends with a peppery finish.
Overpriced is my tasting note...lack of flavor and depth, double cask results in tasting more wood, that drowns out the flavor notes, hints of apricot. Smells great on the nose but doesn’t back it up.
Not badd but I would have expected for at this price point I have seen it for as much as up to a $100 I got it on sale at total mine for 65 and even for that I would have expected more
Wonderful rye! Tons of depth! I’d buy this over willet 4 year or michters. Not as good of an deal the woodford rye. But this is worth buying.
This is an exemplary rye, tonnes of depth of flavour but somehow tames the normal rye firey, spice overload. Outstanding.
