A balanced, Irish Whiskey from Barony of Duhallow, County Cork, Ireland distilled in copper pot stills with 100% local Heirloom Barley & pure Irish spring water. Then it is aged for 10 years in ex-Bourbon barrels & finished in ex-Oloroso casks; before being bottled at 40% ABV. It has an aromatic birth with notes of grain, fruit & spice; while a rich life adds notes of barley, banana & Sherry; that led to a delicate death of medium length with a oak, vanilla, hint of smoke. Nose of wood; sherry cask, sure, but it seems more bourbon barrel to me. Also notes of vanilla, apple, pepper, and a hint of soy sauce. Lightly peppery on the palate, with wood, sherry cask, vanilla and grain. The finish is light and peppery. Nothing impressive here, but no complaints either. Good having as something that’s on the one hand good, and on the other that I’m not concerned with saving. I started this at 3.75, but it just doesn’t have a strong enough flavor profile.
Great whiskey. Smooth to drink and enjoy with company. No need to mix this with anything at all as it’s fruitful taste will have you wanting more and more with every sip.
