About this bottle

Sivó Le Single Malt is made from Quebecois malted barley which is milled on site at the distillery in Franklin, Quebec. The single malt goes into the barrel at 62% ABV for maturation in new oak casks. It is then finished in ex-Sauternes wine casks and bottled at 42% ABV.

Lots of fruits, raisins, hints of cinnamon and oak, extremely smooth for its age (at most 5 yo since the family started in 2014). The colour is fabulous without any colorant. A strong recommendation to buy! Good job Sivo! Tasted it another day, and it gave wonderful aromas if let open up for a few minutes. Colour: amber gold Nose: fresh fruits, raisins, maltiness first, then a hint of citrus fruits, later nuttiness, almonds, moving to oakiness, even a little briny and meaty Palate: raisins, malt sweetness, citrus notes in mid palate, then nuttiness, becomes woody and savory. Finish: medium, dry and oaky P.S. Score changed from 4.25 to 4.

On the nose there's some maltiness, shortbread cookies and a whiff of sulfur. The palate has a more floral quality along with the shortbread. Unfortunately the slight sulphur note remains present on the palate as well. The finish has some vanilla and perhaps a bit of oak? I was expecting a bit more from this young whisky considering the excellent reviews so far. Maybe I got a bad batch?
