About this bottle

Solera aging, a Spanish sherry technique, is the concept of aging one product in older casks and topping it off with more product aged for slightly less time, and continuing this process so that casks of the youngest maturity are eventually aged together with older ones before bottling. The casks are piled in a pyramid and each level is called a "cradera,' the oldest on the bottom. In this case, the bourbon is not only comprised of 3 different mashbills sourced from Kentucky, Tennessee and Indiana and aged in different years (2001, 2001, 2004, 2006, 2007) but also 3 different mashbills made at Colorado's Woody Creek Distillers using locally sourced grain. So 8 different whiskeys of different ages are eventually aged together before bottling. Confused yet? Oh, just drink it!

Had a glass last night, the burn diminished quickly to release a good amount of smoke and Caramel flavor. There was a hint of floral on the back end and finished clean. Each sip after revealed more fruit and subtle sweetness that made it palatable and left me wanting more. This is definitely one to pick up.

It’s okay. Nothing special. Decent amount of burn, but it has some fruit notes to it. I wanted to try it specifically because it had Woody Creek bourbon in it. The Woody Creek rye is phenomenal.

Baked apple pie, red delicious. Warm flaky crust, baking spices, hint of charred (carmmalized) firewood. Better than I anticipated!
