[LOOK] Deep straw [NOSE] Powdery floral fresh grain, sweet straw, faint honey glaze, soft, not highly pronounced but soft and eager [PALATE] Sweet entry of honeyed grain that segues into fusel-y bitterness, fennel bitters, faint pear, sweetens up into unripe orchard fruits with rancid butter [FINISH] Ends with a classic ashy wisp, good balance of heat, ginger, and singed barley husk [MOUTHFEEL/NOTES] Soft entry, delicate until bitter and fervent mid palate, low burn and grain forward finish, excellent Irish whisky. Could have used more approachable fruit, but for what I believe they are going for, solid!

Waterford 1st Cuvée Pilgrimage is the first release for the Irish distillery located on the site of the former Guinness Brewery in Waterford. Head distiller Ned Gahan incorporated single distillates made from each of the 36 farms that Waterford distilled in their first year. This single malt release is limited to just 1500 bottles.
