Absinthe Drip Cocktail (Czech method)

Ingredients
1 1/2 oz Absinthe
2 oz Chilled water
1 cube Superfine/caster sugar
How to make
Serve in a absinthe glass or old-fashioned glass
- 1 BEWARE: please take care
- 2 Flames and alcohol are a dangerous combination!
- 3 Place a sugar cube on a slotted absinthe spoon resting across the top of the glass
- 4 POUR the absinthe over the sugar cube into the glass
- 5 Light the absinthe-soaked cube and leave it to burn and caramelise
- 6 Using a bottle of chilled mineral water with a small hole in the cap, DRIP water over what's left of the sugar so it dissolves and drips into the glass
- 7 Add ice, stir, and serve.
History
The preparation is more theatrical than the final taste.
This method of serving absinthe, supposedly bohemian, gained popularity in 1998 with the UK launch of Hill's Absinthe. If preparing this drink, it is recommended to use a Czech-style absinthe, such as La Fée Bohemian.
