Absinthe Drip Cocktail (French method)

Ingredients

1 1/2 oz Absinthe
2 oz Chilled water
1 cube Sugar cube

How to make

Serve in a absinthe glass or old-fashioned glass

Prepare

  1. 1 Select and pre-chill an ABSINTHE GLASS OR OLD-FASHIONED GLASS.

Method

  1. 2 POUR absinthe into glass.
  2. 3 PLACE cube of sugar on a slotted absinthe spoon resting across the top of the glass.
  3. 4 Using an absinthe fountain (or a bottle of chilled mineral water with a small hole in the cap), DRIP iced water over the sugar so it dissolves and drips into the glass.
  4. 5 Traditionally the same amount of water is added as absinthe, but full-strength absinthe requires more dilution - Keep dripping until absinthe louches (turns milky white).
  5. 6 Add ice, stir and serve.

Slow dripping water is essential to dissolve the sugar cube and balance the absinthe's sweetness.

This represents the conventional technique for serving absinthe, a practice prevalent until the period just before the First World War, when the beverage faced prohibition in most nations.
