Adapted from a recipe by Satvik "Rick" Ahuja, Quarter Bar & Restaurant, Leicester, England. Rick Ahuja created this drink because gin is typically used in pre-dinner aperitif-style drinks, such as a Martini, Negroni, or G & T, or as refreshers in Fizzes, Tom Collinses, and Aviations. He aimed to create a drink demonstrating how gin could be effectively used in the after-dinner category, which is usually dominated by brown spirits. For this reason, he selected a slightly softer, rooty gin, specifically Plymouth Gin, which pairs well with the spice of kummel. The maraschino adds the desired sweetness without making the drink overly cloying or heavy.
