Ingredients

2 oz Calvados apple brandy
3/4 oz Orange juice
1/2 oz Lemon juice
1/2 oz Maple syrup

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lemon zest twist.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

Garnish

  1. 5 EXPRESS lemon zest twist over the cocktail and use as garnish.

History

Apple brandy, orange, and tart lemon enriched with maple syrup. Striking the balance makes a delicious combination. The name suggests American applejack brandy over French calvados; using 45ml (1½oz) bottled-in-bond 50% alc./vol. applejack arguably makes a better cocktail.

The Apple Jack Rabbit is featured in Harry Craddock's 1930 The Savoy Cocktail Book and David A. Embury's 1948 The Fine Art of Mixing Drinks. Embury notes, "This drink is also sometimes, for no reason at all, called the Applejack Dynamite. The same cocktail made with a gin base plus a dash of Angostura is called the Old Vermont." While apple sugar can substitute for maple syrup, it shares the same drawback as ordinary dry sugar when compared to a sugar syrup. The Apple Jack Rabbit is also sometimes, for no reason at all, referred to as the Applejack Dynamite. A variation using gin as the base spirit, along with a dash of Angostura, is known as the Old Vermont.
