Ingredients

2 oz Gin
2/3 oz Lime juice
1/2 oz Homemade ginger syrup
2 dash Aromatic bitters
1/2 oz Egg white (pasteurised)

How to make

Serve in a old-fashioned glass

Method

  1. 1 Select and pre-chill an OLD-FASHIONED GLASS.
  2. 2 Prepare garnish of root ginger slice or piece of crystalised ginger.
  3. 3 SHAKE all ingredients with ice.
  4. 4 STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).

History

Gin and ginger's heat is mellowed by smoothing egg white.

This recipe is adapted from a drink created in 2020 by Boudewijn Vork while he was working at an Italian restaurant in Noosa, Queensland, Australia. Boudewijn explains the rationale behind the cocktail's name: "It begins fruity and lenient, but ends sour and spicy. Like you got betrayed, 'a stab in the back'."
