Ingredients
1 fresh Passion fruit
8 fresh Mint leaves
2 oz Light gold rum 1-3yo
1/2 oz Lime juice
1/2 oz Sugar syrup 'rich' (2:1)
1/4 oz Passionfruit liqueur
How to make
Serve in a collins glass
Prepare
- 1 Select and pre-chill a COLLINS GLASS.
- 2 Prepare garnish of passion fruit half and mint sprigs.
Method
- 3 CUT passion fruit in half and scoop flesh into glass.
- 4 Add mint and gently MUDDLE (just to bruise mint).
- 5 ADD rum, lime juice and sugar syrup.
- 6 Two-thirds fill glass with crushed ice and CHURN to mix.
- 7 Fill glass with more crushed ice and briefly CHURN.
- 8 DRIZZLE passion fruit liqueur.
Garnish
- 9 Garnish with passion fruit and mint sprigs.
- 10 Serve with a straw.
