Ingredients

2 oz Cognac (brandy)
3/4 oz Red quinquina e.g. Dubonnet, Byrrh
1/4 oz Parfait amour liqueur
1 swath Lemon peel

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lemon zest twist.

Method

  1. 3 REGAL STIR all ingredients (including lemon zest) with ice.
  2. 4 STRAIN into chilled glass.

Garnish

  1. 5 EXPRESS lemon zest twist over the cocktail and use as garnish.

Flavour profile

History

Not blue, this is a hero cocktail for parfait amour liqueur. Bitter and aromatic oils from the lemon zest twist are crucial to the balance and overall success; hence the Regal Stir addition.

Emil Bauwens, head barman at the Bar Saint-James in Brussels, Belgium, adapted this recipe and it was recorded in his 1949 book, Livre de Cocktails. Blue Paradise cocktail 1 Zest Citron - 4 Traits Parfait Amour - 2/3 Cognac - 1/3 Dubnnet - Ted "Dr. Cocktail" Haigh brought this vintage cocktail back from obscurity by including it in his Vintage Spirits and Forgotten Cocktails.
