Ingredients
1 oz Light white rum
1 oz Cognac (brandy)
1/2 oz Lime juice
1/3 oz Orange juice
1/3 oz Sugar syrup 'rich' (2:1)
1/3 oz Egg white (pasteurised)
How to make
Serve in a old-fashioned glass
Prepare
- 1 Select and pre-chill an OLD-FASHIONED GLASS.
- 2 Prepare garnish of orange and lime zest twists.
Method
- 3 SHAKE all ingredients with ice and strain back into shaker.
- 4 DRY SHAKE (without ice) to emulsify.
- 5 FINE STRAIN into ice-filled glass.
Garnish
- 6 EXPRESS orange and lime zest twists over cocktail and then discard.

A beautifully balanced, flavourful medley of sweet and sour.
Adapted from David A. Embury's 1948 book, The Fine Art of Mixing Drinks. Rum, much like gin, pairs well with a variety of liqueurs. This cocktail features a blend of rum and cognac as its foundation. BOLERO. 1 part Sugar Syrup 2 parts Lime Juice 4 parts Gold Label Cuban Rum 4 parts Cognac 1 teaspoon Orange Juice per serving Shake with finely crushed ice.
