Ingredients
1 2/3 oz Aged rum (6-10yr)
1/2 oz Bénédictine D.O.M.
1/2 oz Lemon juice
1/3 oz Sugar syrup 'rich' (2:1)
1/3 oz Egg white (pasteurised)
1 dash Orange bitters
How to make
Serve in a coupe glass
Prepare
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of Prepare garnish of orange zest twist (flamed) and ground cinnamon.
Method
- 3 SHAKE all ingredients with ice and strain back into shaker.
- 4 DRY SHAKE (without ice).
- 5 FINE STRAIN into chilled glass.
Garnish
- 6 EXPRESS flamed orange zest twist over cocktail then discard.
- 7 Dust with cinnamon powder.

History
A cinnamon dusting adds spice to this mellow Aged Rum Daiquiri with subtle herbal complexity.
This adaptation was inspired by the late Helen David, cousin of Tony Abou-Ganim, and her preference for a nightcap after special occasions, her favorite being Bénédictine. Tony named the drink in honor of Helen's bar, the Brass Rail in Port Huron, Michigan, USA. The Helen David Spirit Award, which recognizes lifetime achievements at the annual Tales of the Cocktail festival, also commemorates her memory.
