History
Honey and rum choice significantly affects flavour and success. Pair robust rum with more flavourful honey, guided by local supply. Balance sweet honey and sour lime for a great cocktail.
The Canchànchara, a drink said to be the precursor to the Daiquiri, was consumed by Cuban revolutionaries during their fight against the Spanish in the late 1800s. It is a straightforward combination of rum (though originally aguardiente de caña), citrus, and honey. While its exact origins are debated, the Ten Years' War, 1868-78, is generally considered by most historians to be its period. Anistatia Miller and Jared Brown, in their publication Cuban Cocktails, state that it was definitely available during the 1898 Spanish-American Civil War.
