1/3 oz Apricot liqueur
5/6 oz Pineapple juice
5/12 oz Lemon juice
1/3 oz Honey and water syrup

Serve in a coupe glass

- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of pineapple wedge.

- 3 SHAKE all ingredients with ice.
- 4 FINE STRAIN into chilled glass.

History
Scotch whisky adds a delicately malty backbone to this zesty, fruity, and honeyed anytime cocktail.
This Scotch whisky-based cocktail was adapted from a 1990s recipe by London bartender Wayne Collins. It is named after a type of large woodland grouse. Sadly, the UK's Capercaillie population has diminished to such an extent that the bird is now considered at risk of extinction.
