Ingredients

2 oz Light gold rum 1-3yo
1/4 oz Orange Curaçao
1/4 oz Maraschino liqueur
1/4 oz Lime juice
1/4 oz Lemon juice
1/6 oz Sugar syrup 'rich' (2:1)
4 drop Aromatic bitters
1/2 oz Egg white (pasteurised)

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of orange zest twist.

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice).
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 EXPRESS orange zest twist over the cocktail and use as garnish.

History

Use drops rather than dashes of aromatic bitters to keep the Casablanca "blanca" not orange. Original recipes omit egg white, but this variation tastes and looks better with a fluffy head.

Named after the 1942 romantic drama directed by Michael Curtiz, starring Humphrey Bogart, Ingrid Bergman, and Paul Henreid. The film, set during World War II, focuses on an American expatriate's entanglement with the wife of a resistance leader. The script is known for lines like "Play it, Sam," "Of all the gin joints in all the towns in all the world, she walks into mine," and "Here's looking at you kid." A recipe for the cocktail in a cocktail glass, prepared by stirring, is: 2 oz rum, ½ oz lime juice, ¼ oz orange curaçao, ¼ oz maraschino liqueur, and 1 dash Angostura bitters. An alternative preparation uses 2 oz gold Jamaica rum, ¼ tsp. curaçao, ¼ tsp. maraschino liqueur, 1 tsp. lime juice, and a dash of Angostura bitters, mixed with cracked ice in a shaker or blender and strained into a chilled cocktail glass.
