2/3 oz Lemon juice
1/3 oz Pineapple juice
1/3 oz Sugar syrup 'rich' (2:1)
1/12 oz Celery bitters
1/2 oz Egg white (pasteurised)

Serve in a coupe glass
Method
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of celery stick.
- 3 SHAKE all ingredients with ice.
- 4 FINE STRAIN into chilled glass.

The Celery Sour cocktail makes its initial appearance in Tom-Bullock's 1917 publication, The Ideal Bartender. The recipe provided is as follows: CELERY SOUR Fill large Bar glass full Shaved Ice. 1 teaspoon Lemon Juice. 1 teaspoon Pineapple Syrup. 1 teaspoon Celery Bitters. Stir; strain into Fancy Wineglass with Fruit and Serve.
