2 oz Pisco
1/4 oz Lime juice
3 dash Amargo bitters
3 1/2 oz Ginger ale

Serve in a collins glass

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of lime wedge.

  1. 3 POUR all ingredients into ice-filled glass.
  2. 4 Lightly stir.

History

Pisco and ginger ale become more interesting with lime juice and Amargo Chuncho bitters.

The Chilcano de Pisco is a traditional Peruvian method of serving pisco. Its name should not be confused with the Peruvian fish soup, Chilcano de Pescado, although the drink's name is derived from the dish due to a similar hue caused by the aromatic bitters.
