Ingredients

2 oz Bourbon whiskey
5/6 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1 2/3 oz Soda water

How to make

Serve in a collins glass

  1. 1 SHAKE first 3 ingredients with ice and strain into ice-filled glass
  2. 2 TOP with soda, stir and serve with straws.

History

Bourbon, sweetened, soured, and diluted.

Some refer to a bourbon-based Collins as a "John Collins." Originally, a John Collins was made with genever, later with old tom gin, and finally with London dry gin. The shift in the name John Collins to a whiskey-based Collins is explained in a notation within the Holland Gin-based John Collins recipe in Stanley M. Jones' 1977 Jones' Complete Barguide. The note states: " Note: Since Holland Gin is in few bars, Bourbon is often substituted to get the Holland Gin heavier effect. Holland Gin is also "malty" so Scotch would also be a good substitute."
