1/12 oz Sugar syrup 'rich' (2:1)
4 drop Grapefruit bitters

- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of grapefruit zest twist.

- 4 FINE STRAIN into chilled glass.

History
Grapefruit and maraschino provide a balanced counterpoint in this classic gin cocktail.
This drink was created during the Prohibition period at New York's Colony speakeasy, and it is possible that bartender Marco Hattem was the creator. The Colony was a popular spot for an upscale clientele, including the Vanderbilts and Windsors. During raids by federal agents, the liquor was stored in an elevator that could be sent to either the attic or the basement.
