Ingredients

2 oz Vanilla rum
1/3 oz Lime juice
3/4 oz Pineapple juice
1/6 oz Vanilla sugar syrup
3 drop Daiquiri bitters

How to make

Serve in a martini glass

Method

  1. 1 Select and pre-chill a MARTINI GLASS.
  2. 2 Prepare garnish of cox's apple ring (in memory of Jennings Cox).
  3. 3 SHAKE all ingredients with ice.
  4. 4 FINE STRAIN into chilled glass.

History

Vanilla and pineapple enhance the rum's sweetness, balanced by citrus notes.

This is one of two cocktails that secured victory in Havana Club's The Best Daiquiri in London Competition in 2002. The drink is named in honor of Jennings Cox, the American mining engineer who is credited with the initial creation of the Daiquiri.
