Ingredients

2 oz Light gold rum 1-3yo
3/4 oz Lime juice
1/4 oz Chartreuse Yellow
1/4 oz Sugar syrup 'rich' (2:1)
1/6 oz Chartreuse Yellow

How to make

Serve in a wine glass

Prepare

  1. 1 Select and pre-chill a WINE GLASS.
  2. 2 Prepare garnish of seasonal berries and mint sprigs dusted with icing sugar or lime wheel (dehydrated).

Method

  1. 3 SHAKE first 4 ingredients with ice.
  2. 4 STRAIN into glass filled with crushed ice.
  3. 5 DRIZZLE a spoon of liqueur over cocktail.

Garnish

  1. 6 Garnish with berries and mint sprigs bouquet dusted with icing sugar (or lime wheel).

DAISY de SANTIAGO, a Lovely Thing Introduced to Us through the Gracious Offices of the Late Facunco Bacardi, of Lamented Memory. The Bacardi company was known for its hospitality toward visiting yachtsmen and travelers, often offering complimentary Bacardi drinks at a dedicated skyscraper establishment in Havana. This writer notes their name appearing in four places within the establishment's guest book, in a bar deemed impressive enough to rival New York establishments. Alongside the Daiquiri, this is considered by the writer to be the finest Bacardi drink on record. To prepare, fill a large, thin goblet with shaved ice. In a separate bar glass, combine 1½ jiggers of Bacardi, the strained juice of one green lime, and 1 to 1½ teaspoons of bar syrup, if desired. Stir this mixture well, then pour it over the ice in the goblet. Give it a single stir, garnish with fresh mint and fruit, and top with ½ jigger of yellow Chartreuse. The writer personally finds the Chartreuse provides sufficient sweetness, and a dash of charged water adds effervescence. A truly delightful creation.
