Eight Foot Fizz

Serve in a collins glass

1. 1 SHAKE first 6 ingredients with ice and strain into ice-filled glass
2. 2 TOP with soda water poured from a height to create a frothy head
3. 3 Serve with straws
4. 4 <strong>Special ingredient #1</strong> = Lemon sherbet
5. 5 Blend the following for a couple minutes and fine strain
6. 6 600g Caster sugar
7. 7 600g Super strained lemon juice
8. 8 20g Lemon zest (removed from fruit with Microplane grater)
9. 9 5g Maldon sea salt
10. 10 <strong>Special ingredient #2</strong> = Rose water and kiwi syrup
11. 11 Blend the following and bottle
12. 12 5g malic acid
13. 13 100ml Catron kiwi liqueur
14. 14 100ml Merlet pear liqueur
15. 15 100ml Money musk coconut
16. 16 25ml Absinthe
17. 17 5g Maldon sea salt
18. 18 100ml Orgeat syrup
19. 19 50ml Campari
20. 20 200ml Sugar syrup (1:1)
