Ingredients

3 oz Fino sherry
1/2 oz Sugar syrup 'rich' (2:1)
3 dash Aromatic bitters
1 fresh Egg yolk

How to make

Serve in a coupe glass

Method

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of 3 drops of Angostura aromatic bitters.
  3. 3 SHAKE all ingredients with ice.
  4. 4 FINE STRAIN into chilled glass.

History

The salty tang of fino is balanced and given extra richness by the egg.
