Prepare
- 1 Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
- 2 Prepare garnish of grated nutmeg.
Method
- 3 SHAKE all ingredients with ice and strain back into shaker.
- 4 DRY SHAKE (without ice) to emulsify.
- 5 FINE STRAIN into chilled glass.

- 6 Dust with freshly grated nutmeg.

Flips are fundamentally composed of a fortified wine or spirit shaken with an intact egg and sweetened with sugar. They are traditionally crowned with a sprinkle of nutmeg and presented in a sour glass or small coupe, and can be served either warm or cold. Originating in the early 1600s, flips were so popular that Charles Dickens featured this drink in his 1861 novel Great Expectations. Early iterations involved a tankard of ale mixed with sugar, eggs, and spices, heated by a red-hot iron poker taken from the fire. Subsequently, the term "flip" came to encompass any fortified wine or spirit shaken with a whole egg and sweetened with sugar.
