Ingredients
2 oz Old Tom gin
1 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)
3 dash Aromatic bitters
3 drop Saline solution 4:1
How to make
Serve in a old-fashioned glass
Prepare
- 1 Select and pre-chill an OLD-FASHIONED GLASS.
- 2 Prepare garnish of skewered lemon slice wheel and Luxardo Maraschino Cherry sail. (Skewer through either side of lemon with cherry skewered in the centre.)
Method
- 3 SHAKE all ingredients with ice.
- 4 STRAIN back into shaker.
- 5 DRY SHAKE (without ice).
- 6 FINE STRAIN into ice-filled glass.
Garnish
- 7 Garnish with skewered lemon slice wheel and maraschino cherry (sail).

History
The 8:4:2 ratio makes this slightly more sour than the classic 8:3:4 sour build. This ratio uses two parts strong element (gin), three-quarter parts sour element (lemon juice), and one part sweet element (sugar syrup). Depending on the lemons used, the balance should be perfect, especially with the recommended old tom gin. Achieving the correct balance results in a delicious cocktail.
