Ingredients
1 1/3 oz Light gold rum 1-3yo
2/3 oz Light white rum
2/3 oz Falernum liqueur
2/3 oz Lime juice
1/2 oz Sugar syrup 'rich' (2:1)
Xanthan gum (E415)
How to make
Serve in a tiki mug or collins
Prepare
- 1 Select and pre-chill a TIKI MUG OR COLLINS GLASS.
- 2 Prepare garnish of orchid or other edible flower.
Method
- 3 DRY BLEND (without ice) first 5 ingredients on slow setting and then gradually add Xanthan gum while continuing to blend.
- 4 Add 7oz scoop of crushed ice and BLEND some more.
- 5 POUR into chilled glass.
Garnish
- 6 Garnish with an edible flower.
- 7 Serve with a straw.

History
Clove spice and lime juice harmonise with two rums. A familiar combination, yet still a great cocktail.
This famous Tiki cocktail was created around 1963 by Tony Ramos at the China Trader restaurant in Toluca Lake, California, USA. It was made for the cast of the TV series of the same name, who were filming at the nearby Warner Brothers Studios. The drink was originally served in a distinctive Hawaiian Eye mug, which is now highly collectible.
