History
This cocktail is also known as a Papa Doble, and for good reason: it is twice the size of a standard cocktail. Consequently, the recipe provided will fill one oversized Martini glass or two regular coupe glasses. For those with a preference for a bone-dry palate seeking an authentic Hemingway Special without added sugar, the following recipe, provided by Alejandro Bolívar Rodriguez, Head Bartender at El Floridita in Havana, Cuba, is recommended. At El Floridita, this cocktail is blended, not shaken, which is the standard practice for Daiquiris there. Daiquiri Hemingway (El Floridita's recipe) Glass: Hurricane Garnish: Straw Method: BLEND all ingredients with crushed ice for five seconds. 90ml (3oz) Light Cuban rum 5ml (1 spoon) Maraschino liqueur 30ml (1oz) Grapefruit juice 15ml (½oz) Lime juice
Constantino (Constante) Ribalaigua Vert, head bartender at El Floridita, Havana, Cuba, created this drink for Ernest Hemingway. The story goes that Hemingway entered the bar to use the facilities and, after trying the house Daiquiri, declared, "That's good but I prefer it without sugar and with double rum." Thus, the Hemingway Special was born. Hemingway had haemochromatosis, a hereditary condition shared by his father, which may explain his preference for no sugar and a stronger spirit. The initial version was as Hemingway specified: rum, a splash of lime juice, and no sugar. Later, when Antonio Meilan became head bartender at El Floridita, he introduced maraschino liqueur and grapefruit juice. Nowadays, sugar is often added to the mix to make it more agreeable to a wider range of palates. In Cuba, Hemingway was affectionately called 'Papa.'
