History
Spicy rye whiskey is softened with a touch of triple sec for subtle sweetness and citrus lift, while dashes of bitters add aromatic complexity. This cocktail benefits from dilution; a splash of water is recommended. Alternatively, skip water and serve over ice instead of straight up.
This recipe comes from George J. Kappeler's 1895 book, Modern American Drinks: How To Mix and Serve All Kinds of Cups and Drinks. HOLLAND HOUSE COCKTAIL. Place fine ice in a mixing glass, add two dashes Peychaud bitters, one-half pony Eau de Vie d'Oranges, one and a half pony old rye whiskey, and a piece of lemon peel. Stir, then moisten the rim of a cocktail glass with lemon and dip it in sugar. Strain the mixture into the prepared glass. While there are many variations of the Holland House, Kappeler was the head barman at the Holland House Hotel, positioning him as an authoritative source for the hotel's signature drink. Orange eau de vie, or orange distillate, is not commonly available. Triple sec, a clear, sweetened orange distillate, serves as a suitable substitute, and has been used here. Kappeler's book also includes recipes for a "Holland Gin Cocktail" and an "Old-Fashioned Holland Gin Cocktail". HOLLAND GIN COCKTAIL. Fill a mixing glass with fine ice. Add two dashes of Angostura bitters or Peychaud bitters, two dashes of gum-syrup, and one jigger of Holland gin. Stir and strain into a cocktail glass. Garnish with a piece of twisted lemon peel or a maraschino cherry. OLD-FASHIONED HOLLAND GIN COCKTAIL. In a whiskey glass, crush a small lump of sugar with a little water. Add a lump of ice, two dashes of Angostura bitters, a small piece of lemon peel, and one jigger of Holland gin. Stir with a small bar spoon and serve.
