Ingredients
12 fresh Mint leaves
2 1/2 oz Añejo tequila
2/3 oz Sugar syrup 'rich' (2:1)
1 dash Aromatic bitters
2 dash Lavender bitters
How to make
Serve in a julep tin
- 1 SHAKE all ingredients with ice and fine strain into julep cup half-filled with crushed ice
- 2 CHURN (stir) the drink with the crushed ice using a bar spoon
- 3 Top up the cup with more crushed ice and CHURN again
- 4 Crown the drink with some fresh crushed ice, garnish and serve.

History
Given the use of tequila, agave syrup was initially opted for over sugar syrup but the caramel notes this added were found to overwhelm the mint. Instead, consider using demerara sugar in place of white cane syrup or a mix of the two. The original whiskey-based Mint Julep was preferred when tasted comparatively, but a tequila-based Mint Julep is worth trying.
