History
This drink could be considered a rum-based variation of the Aviation. The original 1935 recipe calls for equal parts maraschino and lemon juice, but even a version with one-third less lemon is still quite tart. It is not advisable to drop the cherry garnish into the drink, as this will affect both its appearance and flavor balance. Instead, skewer the cherry and enjoy it as a sweet accompaniment at the end. The author's initial version of this cocktail, prepared before July 2020, contained 60ml light rum, 22.5ml maraschino liqueur, and 15ml lemon juice. However, this combination resulted in a very high alcohol content of 80ml. The current recipe reduces this volume by one-third, maintaining a strong alcoholic profile while aiming for a more palatable drinking experience.
This drink was created in 1935 to commemorate the Silver Jubilee of King George V. Harry Craddock, then head bartender at The American Bar in London's The Savoy Hotel, is credited with its invention. Craddock, who also served as President of the United Kingdom Bartenders' Guild, included the cocktail in the U.K.B.G. Approved Cocktails book, published in 1937. The same year also saw the publication of William James "Billy" Tarling's Cafe Royal Cocktail Book – Coronation Edition, which also featured the drink. Tarling was a prominent figure in the Guild, and the royalties from his book were distributed equally between the U.K.B.G. Sickness Benefit Fund and The Café Royal Sports Club Fund. KING'S JUBILEE.
