  2. 4 TOP with sparkling wine.

History

Champagne or sparkling wine replaces Bourgogne Aligoté in this 'Royal' version of the classic apéritif. Easy to make and drink. Brut champagne may require adjustment for acidity to balance crème de cassis, consider ultra brut.

This is a sparkling variation of the Kir Apéritif. The original apéritif is believed to have been first mixed in 1904 at Café George in Dijon, France. It is named in honor of Canon Félix Kir, who promoted the drink during his tenure as Mayor of Dijon.
