Ingredients

Lime (fresh)
1 1/2 oz OP high ester aged pot still rum
5/6 oz Sugar syrup 'rich' (2:1)
2 dash Aromatic bitters

How to make

Serve in a rocks glass

Prepare

  1. 1 Select and pre-chill a ROCKS GLASS.
  2. 2 Prepare garnish of lime wedge.

Method

  1. 3 MUDDLE lime in base of glass to release juices.
  2. 4 POUR other ingredients into glass.
  3. 5 Two-thirds fill glass with crushed ice and CHURN with barspoon.
  4. 6 ADD more crushed ice to fill glass.

Garnish

  1. 7 Garnish with lime wedge.
  2. 8 Serve with a straw.

Flavour profile

History

Resembles a Caipirinha with a similar sweet, sour, and spirit balance. Bitters highlight the rum's spice, which is as pungent as cachaça.
