History
This cocktail, much like the Lavorato Secco originally served at Milan's Camparino bar, offers a bittersweet, herbal flavor that is excellent for cleansing the palate. The cocktail pictured was made with an old bottle of Zucca Herboris Amaro Centerbe, which is difficult to find. A suggested substitute is equal parts Centerba Esprit Potabile liqueur and Cynar, which creates a blend that is less dry and bitter than Herboris Amaro Centerbe. Double carbonating the soda siphon, a potentially dangerous process, is employed to mimic the effect of the bar's seltzer gun.
This is an adaptation of a famous cocktail from the Camparino Bar in Galleria Vittorio Emanuele, Milan, Italy. The original uses equal parts Rabarbaro Zucca, Campari, and Zucca Herboris Amaro Centerbe, an ingredient made by Zucca exclusively for Camparino Bar. These first three ingredients are charged with seltzer water from a special soda gun, which invigorates the cocktail more effectively than soda water from a bottle.
