History

Herbal Chartreuse, Irish whiskey with lemon and pistachio.

Jillian Vose created this drink in 2019 at the Dead Rabbit, located in New York City, USA. Her original preparation involves 60ml Jameson Black Barrel Irish whiskey, 7.5ml Green Chartreuse, and 22.5ml of a homemade pistachio syrup. The instructions for the syrup are as follows: Homemade pistachio syrup 1. Raw shelled pistachios, 250 grams, should be covered with water in a clean nonreactive container and allowed to soak for a minimum of 30 minutes. 2. The soaking water is then strained from the pistachios. Blend the pistachios while gradually incorporating 600ml of hot water that has been boiled but is not at a boiling point. 3. Continue pulsing the blend until the mixture achieves a smooth consistency. Transfer it to a clean non-reactive container and let it rest for 2 hours. 4. Strain the mixture through a chinois to create pistachio milk, then discard the solid components. 5. In a saucepan over medium heat, combine the pistachio milk with 2 cups of white granulated sugar for every 1½ cup of pistachio milk. Heat, without boiling, until the sugar fully dissolves. 6. Let the mixture cool. Add dashes of orange flower water according to preference. 7. For preservation, add high-proof neutral spirit (75% alc./vol.) and store in an airtight container in the refrigerator for up to 10 days if not consumed immediately.
