Margarita with Salt Foam Float

Ingredients
4 barspoon Salt
1 pint Chilled water
3 oz Egg white (pasteurised)
2 oz Reposado tequila
1 oz Lime juice
1 oz Triple sec
How to make
Serve in a margarita glass
- 1 Combine first three ingredients, POUR into cream whipping siphon and CHARGE with nitrous oxide
- 2 Shake and place siphon in a refrigerator for one hour prior to making drink
- 3 SHAKE next three ingredients with ice and fine strain into chilled glass
- 4 SQUIRT salt foam over surface of drink from siphon.
