Ingredients
1 1/2 oz Cognac (brandy)
1 oz Red quinquina e.g. Dubonnet, Byrrh
1/6 oz Absinthe
1/4 oz Sugar syrup 'rich' (2:1)
1 dash Creole bitters
How to make
Serve in a goblet glass
- 1 STIR all ingredients with ice and strain into ice-filled glass (preferably with one large hand-cracked cube)

History
Cognac and aromatised wine are lifted with a splash of absinthe. Complex and refreshing.
Created in 2013 by Erik Lorincz, who was the Head Bartender at The American Bar in The Savoy Hotel, London at the time. Erik drew inspiration from a work by Claude Monet. This painting hung in the hotel's Monet Suite, the very room where the French impressionist originally sketched the pastel artwork titled Waterloo Bridge in 1901.
