History
Rich rum and pineapple are complemented by subtle coffee and bright lemon citrus.
This cocktail is named after, and was originally served in a mug shaped like, the carved wooden statue that remains at the entrance to the Bali Hai Restaurant in Shelter Island, San Diego, USA (restored in 2010). Bali Hai, meaning "Your own special island," may be named after the song "Bali Ha'i" from the 1949 musical South Pacific. Tom Ham, an accountant, took over the last outpost of The Hut restaurant franchise and saved it when Bali Hai opened in 1955. This cocktail is still the restaurant's signature drink. Jeff "Beachbum" Berry's 2010 book Remixed includes the quote, "Since the Bali Hai opened in 1955, this drink has gone through several incarnations." The recipe provided is based on one from Berry's book, similar to many other adaptations. Kevin Beary at Chicago's Three Dots and a Dash offers a more recent tribute to the original: Mr. Bali Hai. Serve in a Tiki mug or Collins glass, garnished with a pineapple wedge, mint sprigs bouquet, and 3 coffee beans. SHAKE all ingredients with ice and strain into glass/mug filled with crushed ice. Ingredients: 25 ml Black Strap rum, 25 ml Madeira Malmsey, 25 ml Coffee liqueur, 7.5 ml Spiced rum, 7.5 ml Dark Jamaican rum, 7.5 ml Falernum, 25 ml Pineapple juice, 25 ml Lemon juice, 2 dashes Tiki bitters.
