Ingredients

1 oz White overproof rum
2/3 oz Chartreuse Yellow
2/3 oz Falernum liqueur
2/3 oz Lime juice
Banana
Xanthan gum (E415)

How to make

Serve in a poco grande glass

Prepare

  1. 1 Select and pre-chill a POCO GRANDE GLASS.
  2. 2 Prepare garnish of banana slice, star anise and mint sprig.

Method

  1. 3 DRY BLEND (without ice) first 5 ingredients on slow setting and then gradually add Xanthan gum while continuing to blend.
  2. 4 Add 7oz scoop of crushed ice and BLEND some more.
  3. 5 POUR into chilled glass.
  4. 6 Garnish with banana slice on rim, star anise and mint sprig bouquet.

Garnish

  1. 7 Serve with straws.

Flavour profile

History

Hawksmoor, where this indulgent cocktail was discovered, describes their version as: "Our take on a drink that doesn't take itself too seriously by the late, great Gregor de Gruyther. We've just added half a banana and blitzed it. Silly, but tasty."

This cocktail is an adaptation of a variation on the Nuclear Daiquiri, discovered in 2013 at Hawksmoor, Spitalfields, London, England.
