History
Maple syrup pairs with gin in this old-fashioned sour. It works surprisingly well.
David Embury’s 1948 book, The Fine Art Of Mixing Drinks, references this vintage cocktail under the name Apple Jack Rabbit Cocktail. APPLEJACK RABBIT 1 part Maple Syrup 1 part Lemon Juice 1 part Orange Juice 6 parts Apple Brandy Shake with cracked ice. While apple sugar may be substituted for maple syrup, it carries the same disadvantage as ordinary dry sugar when compared to a sugar syrup. This drink is also, for reasons unclear, sometimes called the Applejack Dynamite. The Old Vermont is the same cocktail made with a gin base plus a dash of Angostura.
