Ingredients

1 1/2 oz Light white rum
1/2 oz Orange-red aperitivo
1/2 oz Orgeat syrup
3/4 oz Lemon juice
1/2 oz Egg white (pasteurised)
2 drop Saline solution 4:1

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of aromatic bitters (in dropper bottle or atomiser).

Method

  1. 3 SHAKE all ingredients with ice and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 Garish with aromatic bitters dropped onto, or spayed across, foamy surface.

History

This tart aperitivo balances citrus notes with rich almond syrup.

Barney Toy created this cocktail at Revelry Bar in Auckland, which won the New Zealand 2015 Bacardí Legacy competition. This drink was inspired by the luxurious travel experience of Pan American Airways' First Class flights in the 1920s and 1930s. These flights transported passengers from Florida to Havana, Cuba, during the Prohibition era. The Pan Am Cocktail, with its sophisticated elegance and fragrance, would have been a fitting welcome, complementing the anticipation of an extravagant weekend in Havana.
