Ingredients

1.5 fresh Passion fruit

1 1/2 oz White overproof rum

3/4 oz Lime juice

1/2 oz Sugar syrup 'rich' (2:1)

1/2 oz Passion fruit syrup

1 1/2 oz Brut sparkling wine

How to make

Serve in a collins glass

1 Cut passion fruit in half and scoop out flesh into shaker
2 Add next four ingredients, SHAKE with ice and strain into glass filled with crushed ice
3 CHURN (stir) and then top with sparkling wine.
