History

This drink's inspiration comes from Seattle's Bastille Cafe & Bar. The Pastry War of 1838–39 was a conflict between Mexico and France. It began after a French pastry chef in Tacubaya, Mexico City, alleged that Mexican army officers had damaged his restaurant. This chef was among several foreign nationals who had lodged claims for losses incurred during civil unrest, with their governments having failed to secure compensation from Mexico. The chef's complaints prompted France to initiate hostilities to support his demand for 600,000 pesos, dispatching a fleet to Veracruz. Following a bombardment of the San Juan de Ulúa fortress and occupation of the city, a peace agreement brokered by the British led to the French receiving payment and withdrawing their forces.
