2 oz Fino sherry
1 oz Amaretto liqueur
2 dash Creole bitters
2 dash Absinthe

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of Luxardo Maraschino Cherry.

  1. 3 STIR all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with maraschino cherry.

History

The game is French, the main ingredients Spanish and Italian, but pétanque is played in Basque country. However, the drink's creator and its Creole-style bitters originate from the USA – perhaps a non-European was needed to unite fino sherry and amaretto.

This drink is adapted from a 2014 creation by Andrew Bohrer at Mistral Kitchen in Seattle, USA, and is named after the French game where metal balls are thrown to get as close as possible to a small wooden jack ball. While playing Petanque in France and drinking pastis, inspiration struck. Andrew's original specification was tried, but with an added float of absinthe. The liquorice notes of pastis were found to detract from the cocktail. A couple of dashes of absinthe integrate with the drink's body, providing harmonious additional complexity. This version hopes for agreement on its merits.
