History
A tangy punch highlighting rum's strength and rich flavours.
Fred L. Myers, founder of Myers's rum, is credited with inventing this drink in the late 19th century. The "Old Plantation formula," found on the back of every bottle of his rum, adheres to the traditional rum punch ratios: 1 part sour (lime), 2 parts sweet (sugar), 3 parts strong (rum), and 4 parts weak (water). However, deviating from this, or the American standard of 1 sour, 2 sweet, 3 weak, and 4 strong, the approach here aligns with David A. Embury's suggestion in his 1948 book, The Fine Art of Mixing Drinks. Embury proposed a formula of 1 part sweet, 2 parts sour, 3 parts strong, and 4 parts weak. 1 part Sugar Syrup 2 parts Lemon Juice 3 parts Jamaica Rum 2 or 3 dashes Angostura to each drink. This is shaken vigorously with crushed ice and poured, unstrained, into Collins glasses. The glasses are then filled to the brim with crushed ice. Top off with charged water, leaving about 1/2" to 1/3" of space, and churn with a bar spoon until the glasses begin to frost. Garnish with fruit as desired and serve with straws.
