Flavour profile
History
This crowd-pleaser balances passion fruit and vanilla with zesty lime, and is often served with sparkling wine on the side.
Douglas Ankrah created this drink in 2002 at The Townhouse bar in Knightsbridge, London. He also founded London's LAB bar, which is perhaps more famously linked to this cocktail. Ankrah's 2004 book, Shaken & Stirred, recounts that the drink was originally named the Maverick Martini, in honor of a nightclub in Cape Town, South Africa, which he frequented. "Named after a louche Cape Town nightclub I frequented while writing this book. The shot of Champagne on the side of the beautifully coloured passionfruit and vanilla Martini makes this a very seductive drink. The first time I made these in Townhouse the whole bar was ordering them by the end of the night." This serves two and requires two Martini glasses, preferably frozen, along with tall shot glasses for the Champagne. Ingredients: 80ml Cariel Vanilla Vodka 15ml Passoa (passionfruit liqueur) flesh and seeds of 4 passionfruit 5 teaspoons vanilla sugar 100ml Champagne 1 passionfruit, halved hard ice cubes Method: Combine all ingredients except the Champagne, the halved passionfruit, and 1 teaspoon of vanilla sugar in a Boston shaker. Shake well, then strain into the prepared glasses. In a separate step, pour 2 glasses of Champagne. Dust the halved passionfruit with the remaining sugar. Place the fruit halves in the Martini glasses. The intended method is to consume the fruit with a spoon, followed by the Champagne, and then the cocktail itself.
